Top Hygiene accolade awarded to Beaufort Park Hotel Sous Chef Lee Perrett

The world Famous Salon Culinaire competition saw the Beaufort Park Hotel’s Sous chef Lee Perrett battle it out to win an important award to raise the profile of Flintshire.

After a successful 2009 and the title of Flintshire Chef of The Year under his belt, Lee Perrett did the Beaufort Park Hotel and his county proud by entering into the UK’s leading hospitality shows “Salon Culinaire” at Hotelympia in London. Lee was one of twenty competitive chefs finely selected from across Europe to take part in this phenomenal hospitality show.

The senior competition sponsored by the supplier New Zealand Lamb required its competitors to devise and execute a perfect dish using their quality product. Lee prepared and plated two identical dishes one to taste and one to be entered onto the show table, all in the space of a strict 30 minutes and under the watchful eye of some of toughest judges in the world.

Six award winning international chefs seasoned in competition judgment marked Lee’s dish for food quality, taste and presentation. Further to this four hygiene judges, all top standard environmental health officers, judged overall working practice, food hygiene and personal hygiene.

His fantastic dish came highly commended, but most importantly Lee obtained the internationally recognised hygiene award for his approach and technique to cooking. Sue Warnock business manager of the Beaufort Park Hotel said “It was an achievement in itself that Lee made it into the finals of this prestigious competition. We are immensely proud of his award, it is wonderful to receive the recognition that Lee and the Beaufort Park Hotel team not only produce quality food but also achieve the highest standard of hygiene”. After this success Lee now has his sights set on gaining a coveted place to compete on behalf of the Welsh Culinary team guided by Graham Tinsley.

This signature award winning dish takes proud place on our Orchard restaurant menu, along with other seasonal locally sourced dishes.

People Mean Perfection for Local Hotel

A modern, independent hotel and conference centre welcoming guests, both local and international, the Beaufort Park Hotel has been tailoring packages to suit its customers' needs for over 25 years.

However, while the rooms, services and facilities are never anything less than impressive, it is the hotel's staff - totalling around 100 - that provides its greatest asset.

And those exceptional levels of people management, successful training and wonderfully low staff turnover were rewarded when the Beaufort Park Hotel was honoured with the People Development Award for the 2nd consecutive year at the Flintshire Business Week Awards, which took place at St Davids Park Hotel on the 7th October 2009.

"We're absolutely delighted to have won this award again," beamed Sue Warnock, General Manager, "and all credit goes to all of my colleagues at the Beaufort Park Hotel.  Our philosophy is that placing the wrong people in the wrong positions simply increases turnover, reduces productivity and affects overall morale.  Training and development is key to getting this right, while we also encourage an 'all hand on deck' approach, particularly during busy times."

It's an approach which has certainly worked at the Beaufort Park Hotel and, with the hotel scooping this award in 2008 & 2009, you can be sure that more businesses around Flintshire will be looking to follow the shining example.
